Crockpot Pumpkin Oatmeal

A hearty, delicious warm-up for cool autumn mornings! This recipe services a group - or make it ahead and reheat for several mornings. You can't go wrong with these fabulous tastes of autumn!

Ingredients

2 cups steel-cut oats
12 oz. fat-free evaporated milk
15 oz. pumpkin
5 1/2 cups water
4 teaspoons pumpkin pie spice
1/4 cup real maple syrup

Topping:
Dark brown sugar
Toasted pecans, chopped

Directions

Combine oats, evaporated milk, pumpking, water, pumpkin pie spice and maple syrup in crockpot, stirring until no lumps of pumpkin remain. Set on low and cook for 8 hours. Top individual servings with dark brown sugar and chopped pecans.
