Adi's Coconut Curry Wings

I don't consider myself a cook so when I was shown how easy it was, it gave me more confidence to cook more often. This recipe is by Adison Evans, who is a touring saxophonist for music superstar, Beyonce.

Ingredients

2.5 lb wings (cut into two and clipped)
1/4 cup coconut oil
2 tbsp Jamaican curry powder
2 tsp garlic powder
1/2 tbsp ginger powder
Generous pinch salt and pepper
2 tbsp coconut oil
1 clove garlic crushed and minced
1 tbsp freshly grated ginger
1 tbsp Jamaican curry powder
1/2 tsp crushed red chili flakes
1 cup coconut milk
1.5 tbsp honey
1 tbsp soy sauce
Juice of 1 lime plus 1 sliced for garnishing
Pinch of nutmeg

Directions

Preheat oven to 450 degrees F. Line two baking sheets with foil. Toss wings with coconut oil and dry spices. Spread in a single layer on the baking sheets. Bake until crispy and golden, about 40 mins rotating half way through.
About 10 mins before wings are done, start on the sauce. In a medium sized sauce pan over medium heat, sauté coconut oil with garlic, ginger, curry powder,and chili flakes for 2 mins. Add coconut milk, honey, soy sauce, lime, and nutmeg. Bring to a light simmer, and let reduce until it reaches a thicker consistency. Taste, adjust.
Once wings are done, toss with sauce in a large mixing bowl. Plate and garnish with green onions, cilantro, and a squeeze of lime.
