Coconut Citrus Bars Recipe

Ingredients

  • 3/4 cup butter, softened
  • 1/3 cup confectioners' sugar
  • 1-1/2 cups all-purpose flour
  • 1/2 cup crisp rice cereal
  • FILLING:
  • 4 eggs
  • 1-1/2 cups sugar
  • 1 cup flaked coconut
  • 1/3 cup orange juice
  • 1/4 cup lemon juice
  • 2 tablespoons lime juice
  • 2 tablespoons all-purpose flour
  • 3 teaspoons grated orange peel
  • 2 teaspoons grated lemon peel
  • 1-1/2 teaspoons grated lime peel
  • Confectioners' sugar

Directions

  • 1. Preheat oven to 350°. In a small bowl, cream butter and confectioners' sugar until light and fluffy; gradually beat in flour until crumbly. Stir in cereal. Press into a greased 13x9-in. baking pan. Bake 18-22 minutes or until lightly browned.
  • 2. Meanwhile, in a large bowl, beat eggs, sugar, coconut, juices, flour and peels until frothy. Pour over hot crust. Bake 18-22 minutes longer or until lightly browned. Cool on a wire rack. Dust with confectioners' sugar; cut into bars. Store in the refrigerator. Yield: 2 dozen.
