- 2 medium cucumbers, peeled and thinly sliced
- 1/2 teaspoon salt
- 1/2 cup sour cream
- 1 tablespoon lemon juice
- 2 tablespoons finely chopped green onion
- 1/8 teaspoon pepper
- 1/4 teaspoon sugar
- 1/2 teaspoon dill weed
- In a small bowl, toss cucumbers with salt. Allow to stand for 10 minutes. Meanwhile, combine all the remaining ingredients. Drain cucumbers and combine with sour cream mixture. Cover and refrigerate until serving. Yield: 6 servings.

"I would add a little more sugar for more of a equal taste of lemon juice /sugar ratio. Maybe add a 1/2 tsp to 3/4 tsp of sugar instead of the 1/4 tsp. Or if you don't want to add more sugar than cut down on the lemon juice. This recipe was light and delicious. A nice change of pace from the usual Mayo/Miracle Whip dressing mix. I did notice that the sour cream mixture became almost milk like in consistency when you mixed it with the drained cucumbers."
