  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/3 cup baking cocoa
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1/3 cup coarsely crushed soft peppermint candies
  • 1/3 cup dark chocolate chips
  • 1/2 cup semisweet chocolate chips
  • 1/2 teaspoon canola oil
  • 2 teaspoons finely crushed soft peppermint candies

  1. Preheat oven to 350°. In a small bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine flour, cocoa, cinnamon and baking soda; gradually add to creamed mixture and mix well. Fold in candies and dark chocolate chips.
  2. Shape into 1-in. balls; place 1 in. apart on greased baking sheets. Flatten slightly. Bake 6-8 minutes or until set. Remove to wire racks to cool completely.
  3. In a small bowl, melt semisweet chips with oil; stir until smooth. Drizzle over cookies. Sprinkle with candies. Let stand until set. Store in an airtight container. Yield: about 4 dozen.

"I used a cookie scoop for the first batch and had trouble getting them off the pan. the ones that I rolled came off easier."

"Delicious! I found crushed peppermint candies in a jar at Marshalls at Christmas time last year. I used a small cookie scoop, but only got 2 dozen cookies. Do not over cook these cookies. I pulled them out of the oven when they looked hardly done and they were perfect after sitting a few minutes on the parchment paper."

"I followed the recipe, but used chocolate mint candy canes. My dough was very stiff, so I added a little peppermint Torani syrup (loosens up the dough & thought it would add more mint flavor). My cookies turned out more brownie like. Tasted good but very subtle cinnamon flavor & not what I expected. Didn't use the chocolate drizzle, the cookies were plenty sweet & chocolately. Will make again but will find the soft mint candies."

"These cookies are awesome--I love the flavor combination of cinnamon, chocolate, and mint! I guess I made the cookies bigger than suggested because I only yielded about 2 dozen, but I think that made them chewier. Since I had fewer cookies, I had more chocolate sauce so I spread it like frosting on each. As for the soft peppermint candies, I found the Bob's brand at Target. The texture of the candy is like a hard dinner mint, which adds more of a subtle mint taste/texture than a candy cane would. I'm definitely adding these to my Christmas cookie list."
