Even the finicky eaters in my family love these lovely muffins. The cinnamon-honey butter is a tasty accompaniment.

Ingredients

  • 1-1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1-3/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 egg
  • 1/2 cup milk
  • 3 tablespoons canola oil
  • 3 tablespoons unsweetened applesauce
  • 1 medium McIntosh apple, peeled and grated
  • TOPPING:
  • 1/4 cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • 2 tablespoons cold butter
  • 1/2 cup quick-cooking oats
  • CINNAMON-HONEY BUTTER:
  • 1/2 cup butter, softened
  • 1/4 cup honey
  • 1/2 teaspoon ground cinnamon

Directions

In a large bowl, combine the flour, sugar, baking powder, salt, cinnamon and nutmeg. In another bowl, whisk the egg, milk, oil and applesauce. Stir into dry ingredients just until moistened. Fold in apple. Fill greased or paper-lined muffin cups half full.
For topping, in a small bowl, combine brown sugar and flour; cut in butter until crumbly. Add oats. Sprinkle over muffins.
Bake at 350° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
In a small bowl, beat the butter, honey and cinnamon until blended. Serve with warm muffins. Refrigerate leftover butter. Yield: 1 dozen.

"These were very good. Didn't make the butter thought. I liked shredding the apple too - you didn't get a huge undercooked chunk in your bite!"

"There were a lot of things to like about this recipe. Shredding the apples eliminated those mushy chunks you usually get in baked goods with apples. I loved the oatmeal topping. It got a little crunchy which was really nice. I will add more cinnamon and nutmeg next time and add some cinnamon to the topping as well."

"Woke up this am craving muffins made these with my own homemade applesauce and was very disappointed..very bland very little cinnamon taste and no apple taste at all...waste of time and ingredients...sorry but had to rate them."
