Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon lemon juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 cups shredded rotisserie chicken
  • 1-1/4 cups seedless red grapes, halved
  • 1/2 cup chopped pecans
  • 1/2 cup chopped celery
  • 1/4 cup chopped sweet onion, optional
  • Romaine leaves

3/4 cup chicken salad equals 311 calories, 22 g fat (4 g saturated fat), 70 mg cholesterol, 180 mg sodium, 6 g carbohydrate, 1 g fiber, 21 g protein.

Directions

  1. In a large bowl, combine the first five ingredients. Add the chicken, grapes, pecans, celery and, if desired, onion; mix lightly to coat. Serve on romaine. Yield: 8 servings.

"What a fantastic recipe for chicken salad! This is not my momma's Indiana chicken salad but a whole lot better!! It is not sweet but tangy and an almost duplicate of a local family-owned grocery store here in Baton Rouge recipe that I love but is ubber expensive so a rare treat. I did not add the onion and my only change was I poached my chicken breasts seasoning the water with poultry seasoning, grey sea salt (found in my son's kitchen when I packed him to move and since I'm sure it was left from last girlfriend since he rarely cooks I appropriated) and pepper. It takes less than 20 minutes to poach the chicken breasts (I used boneless-skinless) and I like the taste of the sort of pure chicken if you will as opposed to the rotisserie and I was trying to make it as close to the store- bought as I could get!! Throw in a handful of Craisins as an extra surprise!!"
