  • 1/2 cup finely chopped onion
  • 3 celery ribs, finely chopped
  • 1/2 medium sweet red pepper, chopped
  • 1/2 medium green pepper, chopped
  • 1 tablespoon butter
  • 2 cups chicken broth
  • 2 cups uncooked instant rice
  • 1/2 teaspoon salt, optional
  • 1/4 teaspoon pepper

1/2 cup: 152 calories, 2g fat (0 saturated fat), 1mg cholesterol, 44mg sodium, 30g carbohydrate (0 sugars, 0 fiber), 3g protein. Diabetic Exchanges: 1-1/2 starch, 1 vegetable, 1/2 fat.


  1. In a skillet, saute onion, celery and peppers in butter over medium heat for 2 minutes or until crisp-tender. Remove from the heat; set aside.
  2. In a saucepan, bring broth to a full boil. Remove from the heat. Quickly stir in rice, celery mixture, salt if desired and pepper. Cover and let stand for 6-7 minutes. Stir before serving. Yield: 6 servings.
