- 1/4 cup butter, softened
- 1 cup sugar
- 2 large eggs
- 1-1/4 cups biscuit/baking mix
- 1-1/4 cups chopped mixed candied fruit
- 1 cup chopped pecans
- 1/2 cup flaked coconut
- Confectioners' sugar
- Preheat oven to 350°. Beat butter, sugar and eggs until fluffy. Add biscuit mix. Stir in candied fruit, pecans and coconut.
- Spoon into a greased 13x9-in. baking pan. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Remove to a wire rack to cool. Dust with confectioners' sugar. Yield: 2 dozen.
