Ingredients

  • 1-1/2 cups cold fat-free milk
  • 1 package (1.4 ounces) sugar-free instant chocolate pudding mix
  • 1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
  • 1 cup miniature marshmallows
  • 2 packages (9 ounces each) chocolate wafers

Nutritional Facts

1 each: 73 calories, 2g fat (1g saturated fat), 1mg cholesterol, 114mg sodium, 12g carbohydrate (0g sugars, 1g fiber), 1g protein Diabetic Exchanges: 1 starch.

Directions

  1. In a large bowl, whisk milk and pudding mix for 2 minutes; let stand for 2 minutes or until slightly thickened. Fold in whipped topping, then marshmallows.
  2. For each sandwich, spread about 2 tablespoons of pudding mixture on the bottom of a chocolate wafer; top with another wafer. Stack sandwiches in an airtight container.
  3. Freeze until firm, about 3 hours. Remove from the freezer 5 minutes before serving. Yield: 43 sandwiches.

"Nabisco also makes these chocolate wafers, although many stores do not normally carry them. (Ask your store to order them.) They're also used in many pie crust and cheesecake crust recipes. Good Luck !"

"I have made these before...my grandchildren love them....I order my Nabisco famous chocolate wafers from Netgrocer.com....I've been making the chocolate roll recipe on the wafer box for years...If you are lucky enough to find them at your grocery stores, you'll find them very "pricey"....They are cheaper online, especially if you purchase several boxes as I do."

"I made these with just sugar free Cool Whip in-between the cookie wafers and it was a hit! Just place some Cool Whip between the wafers and then place in freezer in an air tight container. They taste like ice cream sandwiches!"

"I made these sandwiches with chocolate graham crackers. They were very good. After I made them, I found the chocolate wafers--by the ice cream cones and toppings-. so I made this again using the wafers, and we like the graham crackers better because they aren't as "heavy duty" chocolate as the wafers."

"Couldn't find the chocolate wafers either, so made them with French Vanilla pudding and smaller vanilla wafers. Also increased the marshmallows to 2 cups. Got about 60 per batch."

"very good but I could not find the chocolate wafers in any of the stores in my area. So I used chocolate chip cookies. They were very good. NOw I bought chocolate graham crackers. I haven't used them yet but when I do, I'll post a comment to tell how they were compared to the cookies."

"I FOUND THESE AT A PUBLIX STORE WHERE THE ICE CREAM TOPPINGS ARE. THIS RECIPE WAS GREAT EXCEPT IT NEEDS MORE MARSHMALLOWS. I USED 2 CUPS OF MARSHMALLOWS AND IT SPREAD BETTER."
