Ingredients

  • 2-1/2 cups all-purpose flour
  • 1-1/4 cups quick-cooking oats
  • 1 cup sugar
  • 2-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup peanut butter
  • 1/3 cup vegetable oil
  • 2 eggs
  • 2 cups buttermilk
  • 4-1/2 cups bran flakes cereal
  • 1 cup (6 ounces) semisweet chocolate chips

Directions

  • In a bowl, combine the flour, oats, sugar, baking soda and salt; set
  • aside. In a large bowl, beat the peanut butter and oil until
  • combine. Beat in the eggs and buttermilk, Stir into the dry
  • ingredients just until moistened. Fold in the cereal and chocolate
  • chips.
  • Fill greased or paper-lined muffin cups two-thirds full. Bake at
  • 400° for 14-17 minutes or until a toothpick comes out clean.
  • Cool for 5 minutes before removing from pans to wire racks. Serve
  • warm. Yield: about 2-1/2 dozen.
