My cherry truffles were the delicious result of a kitchen experiment involving a bottle of kirsch I’d received as a gift and some dried cherries I had on hand. They won a blue ribbon at the Wisconsin State Fair! —Gerry Cofta, Milwaukee, Wisconsin

  • 1 cup finely chopped dried cherries
  • 1/4 cup cherry brandy
  • 11 ounces 53% cacao dark baking chocolate, chopped
  • 1/2 cup heavy whipping cream
  • 1 teaspoon cherry extract
  • 4 ounces milk chocolate, chopped
  • 4 ounces dark chocolate, chopped
  • Melted dark, milk and white chocolate and pearl dust


  1. In a small bowl, combine cherries and brandy; cover and let soak for 1 hour or until cherries are softened.
  2. Place dark chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Stir in extract and soaked cherries with liquid. Cool to room temperature, stirring occasionally. Refrigerate for 1 hour or until firm.
  3. Shape into 1-in. balls. Place on baking sheets; cover and refrigerate for at least 1 hour.
  4. In a microwave, melt milk chocolate; stir until smooth. Dip half of the balls into milk chocolate, allowing excess to drip off. Place on waxed paper; let stand until set.
  5. Melt dark chocolate; stir until smooth. Dip remaining balls into dark chocolate, allowing excess to drip off. Place on waxed paper; let stand until set. Drizzle with melted chocolate and decorate with pearl dust as desired. Store in an airtight container in the refrigerator. Yield: 4 dozen.

"I made these delicious truffles for the first time. I did not want to buy a whole bottle of Kirschwasser only to use a quarter cup so I used Asbach Uralt (German brandy) to soak the cherries. I also could not find cherry extract so I used vanilla. I left the mixture too long in the refrigerator and it got very hard. I used the microwave at 30 sec. interval and got it to soften up to make the balls. Worked great. And...are they good. They will make a nice gift"

"Are these sweet enough? Shouldn't there be powdered sugar in the truffle part? Does the dark baking chocolate have any sugar?"

"For those wanting to make these alcohol-free, simply soak the cherries in warm water for about 10 minutes and drain. Likewise, if you can find cherry juice in your local grocery, soak the cherries in the amount/time called for in the recipe and drain."
