 Chipotle Crusted Salmon with Triple Berry Sauce
For this grilled salmon, sweet meets heat when chipotle pepper rub is countered with a berry preserves and lime glaze.

Ingredients

  • CHIPOTLE RUB:
  • 2 tbsps. brown sugar
  • 3/4 to 1 tsps. chipotle chile powder
  • 1/2 tsp. ground cumin
  • 1/4 tsp. salt
  • Crisco® Original No-Stick Cooking Spray
  • 4 (4 to 5 oz.) salmon fillets with skin on
  • 1/3 cup Smucker's® Orchard's Finest™ Northwest Triple Berry Preserves
  • 1/2 tsp. fresh lime juice
  • 1 tbsp. finely grated lime peel

Directions

  • Spray cool grill grates with no-stick cooking spray. Heat grill to
  • medium. Blend brown sugar, chipotle powder, cumin and salt. Coat the
  • skin side of the fish with no-stick cooking spray. Spread rub
  • mixture onto top of fish (not skin side).
  • Cook fillets skin side down on grate. Grill fish 12 to 15 minutes or
  • until opaque throughout.
  • Combine preserves with lime juice in a microwave-safe bowl. Microwave
  • 15-20 seconds on HIGH. Drizzle over salmon. Garnish generously with
  • grated lime peel. Yield: 4 servings.
