Chicken Cordon Bleu Pasta Recipe
- 3 cups uncooked penne pasta
- 2 cups heavy whipping cream
- 1 package (8 ounces) cream cheese, softened and cubed
- 1-1/2 cups (6 ounces) shredded Swiss cheese, divided
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic salt
- 1/4 teaspoon pepper
- 3 cups sliced cooked chicken breasts
- 3/4 cup crumbled cooked bacon
- 3/4 cup cubed fully cooked ham
- 3 tablespoons dry bread crumbs
- 1. Preheat oven to 350°. Cook pasta according to package directions for al dente.
- 2. Meanwhile, in a large saucepan, heat cream and cream cheese over medium heat until smooth, stirring occasionally. Stir in 1 cup Swiss cheese, onion powder, garlic salt and pepper until blended.
- 3. Drain pasta; stir in chicken, bacon and ham. Add sauce; toss to coat. Transfer to a greased 13x9-in. baking dish. Sprinkle with remaining cheese and the bread crumbs. Bake, uncovered, 18-22 minutes or until heated through. Yield: 6 servings.
1-1/2 cups equals 826 calories, 56 g fat (33 g saturated fat), 249 mg cholesterol, 1,093 mg sodium, 33 g carbohydrate, 1 g fiber, 47 g protein.

But I'm with the others: If you're watching calories, sodium, cholesterol, carbs, or any combination -- this recipe is NOT for you! But you can lighten it up, as others did -- with the lighter cream and cream cheese -- the Canadian bacon and maybe even leave the bacon out. Although the bacon was my favorite part!! Easy to put together: sliced 2 cooked chicken breasts and chopped up a couple of thickly sliced Black Forest ham pieces (skipped the bacon as I didn't have any) which I added to the sauce while the pasta was finishing up. Instead of onion powder, I sauted onions as my family likes onion and I don't keep onion powder on my shelf. I'd rather use the real thing. I also mixed the dry bread crumbs with melted butter. "I made this ahead for my kids (7 & 3) and I. I intended to make half but cooked more than enough pasta, so the chicken was a little shy. The kids gobbled it down. I used half & half only because it was on sale so a lot cheaper, and 1/3 less fat cream cheese. I also didn't have onion power but I had onion salt and garlic powder so I just switched it up. For the bread crumbs I had a Parmesan and herb panko bread crumbs, which added a little flavor. I poured the sauce on the mixed pasta while it was in the casserole dish. It might have heated up faster if I had put it in a 9x13 but I wanted it in a covered casserole as it was sitting in the fridge all day."
