Chicken Cacciatore Recipe
- 2 medium onions, thinly sliced
- 1 broiler/fryer chicken (3 to 4 pounds), cut up and skin removed
- 2 garlic cloves, minced
- 1 to 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon dried basil
- 1/4 teaspoon pepper
- 1 bay leaf
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 can (8 ounces) tomato sauce
- 1 can (4 ounces) mushroom stems and pieces, drained or 1 cup sliced fresh mushrooms
- 1/4 cup white wine or water
- Hot cooked pasta
- Place sliced onions in a 5-qt. slow cooker. Add the chicken, seasonings, tomatoes, tomato sauce, mushrooms and wine or water. Cover and cook on low for 6-8 hours or until chicken juices run clear. Discard bay leaf. Serve chicken with sauce over pasta. Yield: 6 servings.
Enjoy this recipe with a full-bodied white wine such as Chardonnay or Viognier.

I wasn't very happy with this recipe. I have an old recipe that I compared it to and the older one was much better. It could have been my fault, because I used boneless chicken breasts instead of the breasts with the bone in. I am a firm believer that the bone definitely adds flavor. Also, my old recipe called for 1/4 C RED wine and green pepper. I did add the green pepper, but very sparingly because my husband is allergic to green pepper. Also, my old recipe called for a whole fryer cut up and browned. That could have made a big difference too.
My family really enjoyed this meal! I had all the ingredients, which are pretty basic; even had sliced mushrooms in the freezer that I used. Simple ingredients, one-step prep, and a delicious result - perfect!
Delicious! Excellent recipe, very tasteful and enjoyable. I live on a little island belonging to France off of the province of NL and had a little trouble finding some ingredients at the shop, but I substituted a few things as pointed out in a previous review and it turned out perfect. Even some picky islanders here tried and it and enjoyed it. I'd go into further discussion on those substitutions but I might get accused of changing the recipe and not properly reviewing it. Rhijulbec needs to calm down and actually rate recipes rather than critique other reviewers. Real mature.
I don't ever write reviews but I just had to for this meal. It was exceptionally good and my family loved it. I used Foodaddict617s helpful suggestions for the flavored tomatoes, and Italian seasoning because that is all I had in my pantry. And I also used the oven rather than a slow cooker. I made enough extra sauce to freeze for lasagna on a later night and my kids are actually excited for it!!! I had them help and dice some onions and green pepper to throw in the mix before freezing. This meal was truly delicious, thanks Taste of Home, and thanks for the helpful reviews. Also, I don't think substituting one seasoning for another and using flavored diced tomatoes counts as changing the entire recipe. It's all a matter of taste and a recipe that can successfully be changed according to what you have on hand is a very special recipe indeed!
I found Foodaddict617's review very helpful. I think 'rhijulbec' needs to grow up. I was happy to know that I could use any tomato sauce I had on hand and that I could successfully use Italian Seasoning because I don't have basil and oregano on hand. I was also especially happy to know that the recipe is still bright if I use water rather than wine, because my family doesn't use alcohol. And since I don't use a slowcooker I was happy to see that this recipe works fine in the oven, but I'm pretty used to making that substitution anyways. Thanks Foodaddict617 for your helpful information, and for trying the few substitutions you made for the rest if us who are afraid to try.
Ps this recipe is really nice. It's fancy enough for company and quick and easy enough for a family meal.
