Chicken Broccoli Casserole Recipe

Broccole is a favorite vegetable in our home. This is one dish that always gets rave reviews. Serve it for a brunch or dinner.—Colleen Lewis, Cottonwood, Arizona
TOTAL TIME: Prep: 10 min. Bake: 25 min. YIELD:6 servings

Ingredients

  • 3 cups fresh broccoli florets
  • 2 cups cubed cooked chicken or turkey
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon curry powder
  • 1 cup cubed bread
  • 2 tablespoons butter, melted

Directions

  • 1. In a small saucepan, cook broccoli in water until crisp-tender; drain. Place in a greased 11-in. x 7-in. baking dish; set aside.
  • 2. Combine the chicken, soup, mayonnaise, cheese and curry powder; spoon over broccoli. Top with bread cubes and butter. Bake, uncovered, at 350° for 25-30 minutes or until heated through. Yield: 6 servings.

"I baked mine a little too long (old oven), but it was still tasty! I'm not a huge fan of parmesean cheese, so I used some colby instead. Still great!"

"I think I just ate the best thing I've ever made. I boiled new potatoes with the broccoli and increased the curry to 1whole teaspoon. I made my own cream sauce with butter flour and milk to save on the saltiness of canned soup. I skipped the bread cubes entirely. Oh and I only had the dried parmesan, the kind you sprinkle on pasta and it turned out fabulous!! It's July 3 and my kitchen is a hot mess and so am I, but I will definitely make this in the winter as one of my comfort food casseroles. thank you for this recipe."

"Very good...added one cup milk to soup mixture...definitely needed it to spread on top of veggies...added garlic and onion powder s & p and celery salt...topped with bread that I buttered on both sides and cubed...very tasty...also used frozen peas and corn that I parboiled first....nice change if you do not like broccoli! You can omit the curry...it is still good!"

"My husband and son love this casserole. I added a bit more than the 1/2 teaspoon of curry. My husband said that he would have liked more bread cubes. I simply buttered a slice of white sandwich bread and cut it into cubes. My son is such a picky eater, but this casserole didn't have anything offensive in it. If you have a kid who generally doesn't like broccoli, he/she might like it in this dish. The sauce is not too rich or spicy and there isn't anything in it (like onions) that they will spit out. Husband and son say that this recipe is a keeper."

"Very good! But I love curry and Asian so upped it a bit with chopped cashews and about four cloves of chopped garlic. Needed to be creamier, even tho I added about 3 oz of sour cream...would add more next time. Awesome dish I will do again."

"This recipe was easy to put together. I did make 2 changes; no curry powder and I used panko crumbs. My husband said "this is great, you need to make it often." The one reviewer made a comment regarding "stuffing". I re-read the recipe several times and no where did I see an ingredient as stuffing."

"I followed this recipe exactly and the flavor was not that impressive. My son said,"Mom if there is one thing I never want you to make again, this is it!" I thought it was very salty tasting from the parmesan cheese or something."
