A favorite meal for our family consists of this coleslaw served with traditional Maryland crab cakes and corn on the cob. It's especially good on a warm summer day. This slaw is delicious with other meals, too.

Ingredients

  • 3 cups shredded cabbage
  • 2 cups shredded carrots
  • 1/3 to 1/2 cup olive oil
  • 2 tablespoons vinegar
  • 1-1/2 teaspoons seafood seasoning
  • 1/4 teaspoon salt
  • Dash pepper

Nutritional Facts

1 cup: 130 calories, 12g fat (2g saturated fat), 0mg cholesterol, 283mg sodium, 6g carbohydrate (3g sugars, 2g fiber), 1g protein

Directions

  1. In a bowl, combine cabbage and carrots. In a small bowl, combine oil, vinegar, seafood seasoning, salt and pepper. Pour over cabbage mixture and toss to coat. Cover and refrigerate for at least 1 hour. Yield: 4-6 servings.

"I have made this slaw several times as an alternative to the traditional mayo-based kind. I get lots of comments each time I fix it -- everyone seems to like it a lot. I know I do!"
