Chai Recipe

Chai (rhymes with "pie") is the word for tea in some parts of the world...but in India, it's a spiced milk tea that's becoming more popular in North America. This recipe is just as tasty as any coffee-house chai. —Peggy Fleming
TOTAL TIME: Prep/Total Time: 25 min. YIELD:4 servings

Ingredients

  • 2 cups water
  • 2 individual tea bags
  • 1 cinnamon stick
  • 6 cardamom pods, crushed
  • 1 whole clove
  • 1/4 teaspoon ground ginger
  • 2-1/2 cups milk
  • 1/3 cup sugar
  • Sweetened whipped cream, ground cinnamon and cinnamon sticks, optional

Directions

  • 1. In a small saucepan, combine the first six ingredients. Bring to a boil. Reduce heat; cover and simmer for 5 minutes.
  • 2. Stir in milk. Return to a boil; boil for 1 minute, then strain. Stir in sugar until dissolved. Pour into mugs. Top each with whipped cream, cinnamon and a cinnamon stick if desired. Yield: 4 servings.

"I make this recipe many many times throughout the cooler months. However, I've altered it some. I buy all ground spices except for the cloves...put all the spices in a coffee filter and tie the filter with the tea bag strings. It makes for an easy cleanup, and no straining to worry about. It's a great recipe that I highly recommend."

"actually preparing to make, however I hope Kris in Michigan feels great about being born knowing all things culinary. A person familiar with chai spices would know it meant clove, even though it does kinda look like dove. Perhaps someone venturing out of the familiar would read the ingredient list and think"clove of garlic?" I find that reviews are helpful in locating tweaks for various recipes, and possible substitutions for hard to find ingredients. Lighten up =)"

"I think it is a clove and not a dove -- we have said before we don't like the "CL" in this new font.  A clove -- I think -- is that small spikey spice that I stick into oranges at Christmas time so the kitchen smells nice.  I also add it to a hot apple cider beverage I do in the crock pot.  Of course it could be a dove.  This is interesting.

"Dove is a chocolate. It comes in milk chocolate and dark chocolate. It comes as small squares in a bag in the candy aisle or as a candy bar at check out. This recipe does not specify size or flavor, but I would assume it is a small square of milk chocolate. Good Luck!"
