Cauliflower Popcorn Recipe
- 1 large head cauliflower, broken into small florets
- 1 tablespoon olive oil
- 1/2 teaspoon garlic salt
- 1 tablespoon grated Parmesan cheese
- 1. Place cauliflower in a greased 15-in. x 10-in. x 1-in. baking pan. Drizzle with oil and sprinkle with garlic salt; toss to coat. Bake, uncovered, at 400° for 15-18 minutes or until tender, stirring once. Sprinkle with cheese. Yield: 4 servings.
3/4 cup: 88 calories, 4g fat (1g saturated fat), 1mg cholesterol, 309mg sodium, 11g carbohydrate (5g sugars, 5g fiber), 5g protein. Diabetic Exchanges: 2 vegetable, 1/2 fat.

"A little bland for my taste...I too used garlic powder + salt & could've gone heavier on both. Also, it took closer to 30 minutes for mine to be tender crisp. Will make again, love the method!"

"We did not use the parmesan, we used garlic powder + salt as we did not have garlic salt. My husband didn't measure anything, so I think he seasoned it more heavily than these measurements. Having said all that--we LOVED this. My kids ate it cheerfully and voluntarily. It's definitely not like popcorn, but it is tasty and has a great texture."
