Cashew Apple Salad Recipe

"My sister-in-law brought this crunchy salad to a potluck and it's been a favorite ever since," says Hamilton, Montana's Tammy Burnham. "It goes with any entree because the sweet dressing is so light. The recipe can easily be doubled for crowds."
TOTAL TIME: Prep/Total Time: 15 min. YIELD:8-10 servings

Ingredients

  • 1/2 cup confectioners' sugar
  • 1/4 cup Miracle Whip
  • 4 celery ribs, sliced
  • 2 small apples, chopped
  • 1 can (10 ounces) salted cashews

Directions

  • 1. In a bowl, combine confectioners' sugar and Miracle Whip until smooth. Stir in the celery, apples and cashews. Serve immediately. Yield: 8-10 servings.

"Easy to make and delicious to eat but the cashews get soggy very quickly. Leftovers aren't that great but there rarely are any."
