Carrot Raisin Salad Recipe
- 4 cups shredded carrots
- 3/4 to 1-1/2 cups raisins
- 1/4 cup mayonnaise
- 2 tablespoons sugar
- 2 to 3 tablespoons 2% milk
- 1. Place carrots and raisins in a large bowl. In a small bowl, combine the mayonnaise, sugar and enough milk to achieve dressing consistency. Pour over carrot mixture; toss to coat. Yield: 8 servings.
1/2 cup: 122 calories, 5g fat (1g saturated fat), 1mg cholesterol, 76mg sodium, 19g carbohydrate (14g sugars, 2g fiber), 1g protein. Diabetic Exchanges: 1 fat, 1/2 starch, 1/2 fruit.
