Ingredients

  • 1 package (8 ounces) Caribbean rice mix
  • 6 cups water
  • 1/2 pound fresh asparagus, trimmed and cut into 1-inch pieces
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 medium tomato, chopped

Nutritional Facts

1-1/2 cup: 352 calories, 8g fat (4g saturated fat), 183mg cholesterol, 1278mg sodium, 47g carbohydrate (2g sugars, 2g fiber), 23g protein

Directions

  1. Prepare rice mix according to package directions, omitting chicken. Meanwhile, in a large saucepan, bring water to a boil. Add asparagus; cover and cook for 2 minutes. Stir in shrimp; cook for 2-3 minutes or until shrimp turn pink. Drain. Add asparagus, shrimp and tomato to rice; toss gently. Yield: 4 servings.

"I've been making this since it first came out in your magazine and love it! I can't find the Caribbean Rice Mix anymore so I just use Knorr Creamy chicken Rice Mix. It's so easy and has a wonderful flavor."
