California Egg Bake Recipe
- 3 eggs, lightly beaten
- 1/4 cup sour cream
- 1/4 teaspoon salt
- 1 medium tomato, chopped
- 1 green onion, sliced
- 1/4 cup shredded cheddar cheese
- 1. In a small bowl, whisk the eggs, sour cream and salt; stir in the tomato, onion and cheese. Pour into a greased 2-cup baking dish.
- 2. Bake, uncovered, at 350° for 25-30 minutes or until a knife inserted in the center comes out clean. Yield: 2 servings.
3/4 cup equals 233 calories, 17 g fat (9 g saturated fat), 352 mg cholesterol, 500 mg sodium, 6 g carbohydrate, 1 g fiber, 14 g protein.
