- 2 tablespoons sun dried tomato pesto
- 1 Eggland's Best® hard cooked peeled egg, diced
- 1/2 avocado, diced
- 1 slice of bread
- Pinch of salt & pepper
- Dice 1 hard cooked peeled egg and set aside.
- Take half of an avocado and dice.
- Toast one slice of bread and set it on plate.
- Spread sun dried tomato pesto onto toast.
- Top with diced hard cooked peeled egg and avocado.
- Add of pinch of salt and black pepper and enjoy! Yield: 1 serving
