When we have fresh cabbage and cucumbers from the garden, this is one of my favorite salads to make for Sunday dinner. But with fresh produce available year-round, it's good anytime.—DeEtta Rasmussen, Fort Madison, Iowa

Ingredients

  • 1 package (3 ounces) lime gelatin
  • 1 cup boiling water
  • 1/2 cup mayonnaise
  • 1 cup shredded cabbage
  • 1/2 cup chopped cucumber
  • 2 tablespoons chopped green pepper

Nutritional Facts

1 serving (1 each) equals 284 calories, 22 g fat (3 g saturated fat), 10 mg cholesterol, 202 mg sodium, 20 g carbohydrate, 1 g fiber, 2 g protein.

Directions

  1. In a bowl, dissolve gelatin in boiling water. Whisk in the mayonnaise until smooth. Stir in the cabbage, cucumber and green pepper. Pour into four custard cups. Cover and refrigerate until firm. Yield: 4 servings.
