Buttery Sweet Potato Casserole Recipe

Whenever we get together as a family for major holidays, my kids, nieces and nephews literally beg me to make this dish again. It goes together in minutes with canned sweet potatoes, which is ideal for the busy holiday season. —Sue Miller, Mars, Pennsylvania
TOTAL TIME: Prep: 15 min. Bake: 20 min. YIELD:6-8 servings

Ingredients

  • 2 cans (15-3/4 ounces each) sweet potatoes, drained and mashed
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup butter, melted
  • 1/2 teaspoon ground cinnamon
  • Dash salt
  • TOPPING:
  • 1 cup coarsely crushed butter-flavored crackers (about 25 crackers)
  • 1/2 cup packed brown sugar
  • 1/4 cup butter, melted

Directions

  • 1. Preheat oven to 350°. In a large bowl, combine first six ingredients. Transfer to a greased 8-in.-square baking dish. Combine topping ingredients; sprinkle over sweet potato mixture.
  • 2. Bake, uncovered, 20-25 minutes or until a thermometer reads 160°. Yield: 6-8 servings.

"This is a very good recipe, although I have another one we like a bit better. Definitely cut the brown sugar for the base and topping in half or it will be too sweet. I used 4 cups of fresh yams, boiled & mashed. You can make it a day ahead then bring to room temp and bake the next day. Really loved the topping."

"I've made several different sweet potato recipes over the years but this is by far the best!! I have 5 sons who don't particularly care for sweet potatoes but they all LOVED this dish. "All I have to say is it's SO YUMMY!!!! Even cold!!!! For the sugar in the sweet potatoes, I did 1/4 cup white sugar and 1/4 cup brown sugar. But I think next time I would cut the sugar in half, so 1/8 cup white sugar and 1/8 cup brown sugar and mix the topping as directed."

"Simply delicious! I mix all filling ingredients in the pan I'm baking in. Place all topping ingredients in a ziploc bag and sprinkle on top. No cleanup! I have made several times and have cut back on the sugar in both the filling and topping. Kids and hubby couldn't tell the difference."
