Broccoli Shrimp Alfredo Recipe

After tasting fettuccine Alfredo at a restaurant, I tried to duplicate the recipe at home. You can't imagine how pleased I was when I came up with this delicious version. Not only does my family love the creamy dish, but my husband prefers it to the one at the restaurant. —Rae Natoli, Kingston, New York
TOTAL TIME: Prep/Total Time: 30 min. YIELD:4 servings

Ingredients

  • 8 ounces uncooked fettuccine
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 3 garlic cloves, minced
  • 1/2 cup butter, cubed
  • 1 package (8 ounces) cream cheese, cubed
  • 1 cup milk
  • 1/2 cup shredded Parmesan cheese
  • 4 cups frozen broccoli florets
  • 1/2 teaspoon salt
  • Dash pepper

Directions

  • 1. Cook fettuccine according to package directions. Meanwhile, in a large skillet, saute shrimp and garlic in butter until shrimp turn pink. Remove and set aside.
  • 2. In the same skillet, combine the cream cheese, milk and Parmesan cheese; cook and stir until cheeses are melted and mixture is smooth.
  • 3. Place 1 in. of water in a saucepan; add broccoli. Bring to a boil. Reduce heat; cover and simmer for 6-8 minutes or until tender. Drain. Stir the broccoli, shrimp, salt and pepper into cheese sauce; heat through. Drain fettuccine; top with shrimp mixture. Yield: 4 servings.

"Since I've gotten lazier the older I get, I'm sure you could use Ragu Roasted Garlic Parmesan Sauce instead of making your own from scratch. This has been a staple with us for years because you can interchange any meat and any vegetables. Last night I tried it with salmon filets and frozen California Blend Vegetables and it was delicious. (This is no small feat as we really don't like the flavor of salmon but we live by the mantra of "you catch it, you eat it!""

"I have made this recipe twice now. Both times, I substituted fresh broccoli for the frozen stuff and just put it on to steam while preparing the rest of the dish. Last night, there was a sale on shrimp so I used two pounds instead of one. I tend to go with more garlic as well. Also last night, I decided I'll use twice the grated parmesan cheese next time too. All in all...this is a great dish and will be a frequent fare for my table."

"I make this recipe using the leftover shrimp from new years eve. I still saute in the butter and garlic and follow the rest of the recipe. The old bay from the shrimp really add flavor to this recipe. Delicious! My husband looks forward to this meal at the beginning of every new year. I also make through out the year using chicken. Kids love it!"

"I liked this a lot. I had to cut a few things in half because of dietary restrictions in our family. So...I only used 1/4 cup butter and I added 2T olive oil. I used 4oz lite cream cheese and we have to live with skim milk here so we did. I added 1T of flour to make sure my skim milk would still make a neat, clingy sauce. Also had to change the salt to Mrs. Dash original. Overall, it was still very good and would be as great with chicken as it was with the shrimp."

"This was very good. I took the broccoli out and cooked it as a side instead. I sautèed sliced mushrooms in the butter and garlic and had to use precooked shrimp as it was all my store had. The only change I would make would be to add a little white wine into the sauce at some point in the cooking process. Otherwise, very good. Could probably cut the butter at least in half. I also used freshly grated Parmesan and omitted the salt, relying instead on the salt in the cheese."
