For a simple but sensational side dish, I throw together this refreshing salad. I adjusted a friend's recipe to cut a few calories. The raisins add sweetness, and the bacon gives it a nice crunch. —Angela Oelschlaeger, Tonganoxie, Kansas

Ingredients

  • 4 cups fresh broccoli florets (1 medium bunch)
  • 3/4 cup golden raisins
  • 1 small red onion, chopped
  • 1/2 cup Miracle Whip
  • 1 tablespoon white vinegar
  • 2 teaspoons sugar
  • 3 Jones Dairy Farm Dry-Aged Bacon strips, cooked and crumbled

Directions

In a large bowl, combine the broccoli, raisins and onion. In a small bowl, combine the Miracle Whip, vinegar and sugar. Pour over broccoli mixture; toss to coat. Sprinkle with bacon. Refrigerate for at least 2 hours before serving. Yield: 6 servings.

"I've made this salad for many years, it's so quick and easy and taste like a bit of heaven in your mouth. Also good with cauliflower in it and I usually also add either pecans, sunflower seeds or walnuts whichever I have on hand but I always do add one of them in my salad. Hint: if you plan to serve this to company and want to make it ahead, don't add your raisins until right before you put it on the table. Raisins will plump and lose their chewiness if put in head of time making them soft and swelled sort of like prunes. With just the two of us left at home I usually just make this salad, chill it and add raisins to it on our plates. I don't like the raisins when they get plump and soft but that's just me. This is by far one of the best salads I've ever eaten! I always use miracle whip in mine. This is suppose to be a sweet salad, hence why it has raisins in it! I also use apple cider vinegar but has also used white vinegar when out of apple cider vinegar and it taste the same to me either way. Delicious!!!!"

"I love this salad. In the interest of cutting calories, I made the following substitutions: turkey bacon for bacon, low-sugar cran-raisins for golden raisins, Splenda or other sugar substitute, lower fat mayo. I had lemon white vinegar handy instead of the plain white vinegar which added a little lemon flavor and used one small spring onion bulb instead of red onion, but either is good. I also don't like raw broccoli so I cooked it slightly before adding the other ingredients."

"I always made broccoli salad w/ mayo. A friend recently gave me this exact recipe made w/Miracle Whip. It makes sooo much difference. I buy Miracle Whip just fore this salad!!! YUMMY!!"

"Love this recipe. I also add cauliflower for more color and have used chopped baby carrots. I always make with red wine vinegar and mayo, use craisins rather than raisins, have used pecans and walnuts and sunflower seeds, all are good variations. I have also sprinkled in some finely shredded cheddar cheese. Really any variations you use with this recipe is good. You can't lose."

"I changed the basic recipe. I used dried, sweetened cranberries, green onions & 1/4 c mayo plus 1/4 c plain yogurt. All other ingredients are same. It's less calories and very tasty. I love dried cranberries."

"Been making this for years. It always goes quickly at potlucks. Add some coarsely chopped pecans. We like them better than sunflower seeds. I also use apple cider vinegar and regular raisins. Gonna try the craisins sometimes. Sounds good."

"Very tasty , the dressing had just the right amount of sweetness. I didn't have golden raisins so I used regular raisins and it tasted fine!"
