Blueberry Pancake Snack Mix Recipe
The taste of a breakfast time favorite in a snack mix! My no-fuss, kid-friendly recipe is easy to mix and perfect for busy families who are on the go. —Aysha Schurman, Ammon, Idaho
- 3 cups Corn Chex
- 2 cups Wheat Chex
- 1 cup Rice Chex
- 2 cups dried blueberries
- 1 cup chopped walnuts
- 1/3 cup maple syrup
- 1/4 cup butter, melted
- 1. In a large microwave-safe bowl, combine the cereals, blueberries and walnuts. In another bowl, combine syrup and butter. Pour over cereal mixture; toss to coat.
- 2. Microwave on high for 5 minutes, stirring after each minute. Spread onto waxed paper to cool. Store in an airtight container. Yield: 2 quarts.
3/4 cup: 320 calories, 12g fat (3g saturated fat), 12mg cholesterol, 189mg sodium, 50g carbohydrate (22g sugars, 5g fiber), 5g protein.
