Blueberries with Cake Topping Recipe

Ingredients

  • 2 cups fresh blueberries
  • 1 cup King Arthur Unbleached Self-Rising Flour
  • 3/4 cup sugar
  • 3/4 cup milk
  • 1/2 cup butter, melted

1 serving (1 piece) equals 258 calories, 12 g fat (8 g saturated fat), 34 mg cholesterol, 307 mg sodium, 36 g carbohydrate, 1 g fiber, 3 g protein.

Directions

  1. Place the blueberries in a greased 8-in. square baking dish. In a small bowl, combine the flour, sugar, milk and butter until smooth.
  2. Pour over blueberries. Bake at 375° for 35-40 minutes or until golden brown and a toothpick inserted near the center comes out clean. Cool on a wire rack. Yield: 6-8 servings.
Editor's Note: As a substitute for 1 cup of self-rising flour, place 1-1/2 teaspoons baking powder and 1/2 teaspoon salt in a measuring cup. Add all-purpose flour to measure 1 cup.
