Black Bean Salad Recipe
- 2 cans (15 ounces each) black beans, rinsed and drained
- 1-1/2 cups salsa
- 2 tablespoons minced fresh parsley or cilantro
- 1. Combine all ingredients in a bowl. Chill for 15 minutes. Yield: 8 servings.
One 1/2-cup serving equals 93 calories, 453 mg sodium, 0 cholesterol, 16 gm carbohydrate, 6 gm protein, 1 gm fat. Diabetic Exchanges: 1 starch.
