Berry Tossed Salad Recipe
- 1 package (10 ounces) ready-to-serve salad greens
- 1 cup sliced fresh strawberries
- 1 kiwifruit, peeled and sliced
- 1/4 cup chopped red onion
- 1/4 cup crumbled feta cheese
- 2 tablespoons slivered almonds
- CREAMY RASPBERRY DRESSING:
- 1/2 cup mayonnaise
- 2 tablespoons plus 2 teaspoons sugar
- 1 tablespoon raspberry vinegar
- 1 tablespoon 2% milk
- 2-1/2 teaspoons poppy seeds
- 2-1/2 teaspoons seedless raspberry jam
- 1. In a large salad bowl, combine the greens, strawberries, kiwi, onion, feta cheese and almonds.
- 2. In a small bowl, whisk the dressing ingredients. Drizzle desired amount over salad and toss to coat. Refrigerate any leftover dressing. Yield: 8 servings.
1 cup: 167 calories, 13g fat (2g saturated fat), 7mg cholesterol, 120mg sodium, 11g carbohydrate (8g sugars, 2g fiber), 2g protein.

"I've been making a very similar salad for years-try greek yogurt or 1/2 greek yogurt and 1/2 mayo. Cuts down the fat content and ups the protein as well! This can also be made using pomegranate and blueberries or mandarin oranges and almonds (switch to cider vinegar/use citrus juice and add 1 Tbs. honey instead of sugar w/ 1 tsp dry mustard)."

I'm sad to see that someone really didn't respond to the Creamy Raspberry Dressing, because it was SO very good. I made this salad exactly according to the recipe. One thing that might have helped the dressing was that I made it the night before Easter, so I have the feeling it allowed the dressing ingredients to meld. And, I always use a high quality raspberry jam that's not too sweet, so maybe that made a difference too. My boyfriend, who swears he doesn't like "creamy" anything, absolutely loved this salad. Oh...one change I made...I toasted the almonds. Yummy! And, if you don't like onions, try the sweet onions that are available. I use them in place of most onions in recipes, and people who don't like onions will just get the nice flavor without the zippiness that some onions have. A bonus was, the little bit of leftovers that we had were absolutely delicious the next day! This is perfection in a salad bowl."
