Beer Dip Recipe
- 2 packages (8 ounces each) cream cheese, softened
- 1/3 cup beer or nonalcoholic beer
- 1 envelope ranch salad dressing mix
- 2 cups (8 ounces) shredded cheddar cheese
- 1. In a large bowl, beat the cream cheese, beer and dressing mix until smooth. Stir in cheddar cheese. Serve with pretzels. Yield: 3-1/2 cups.
2 tablespoons: 89 calories, 8g fat (5g saturated fat), 26mg cholesterol, 177mg sodium, 1g carbohydrate (0 sugars, 0 fiber), 3g protein.

"Winner ! I made up just 1/2 of this recipe and had quite a bit left over. I used some of it tostuff a jalapeno pepper with. Hubby really enjoyed this lightened up version. The last little bitI used to stuff celery. One recipe served 3 ways and everyone was wonderful. Ranch dressing mix can be on the salty side so I would suggest seasoning as you go along. This gave it more of a beer flavor without adding more liquid to the recipe. Everyone liked it and I'm making it again today for a potluck tomorrow. I think this is a really good recipe but I would cut down on the ranch next time since I thought it was pretty salty and I love salt. But add the pretzels and it really seemed salty. Either that or I'd add another 8 ounces of cream cheese to cut the salty taste of the ranch. I think next time I'll try using even a little more beer since it was not at all runny using the 1/2 cup instead of the 1/3 cup that the recipe called for.
