Barley Burger Stew Recipe
- 1/2 pound ground beef
- 1 small onion, chopped
- 1/4 cup chopped celery
- 2-1/4 cups tomato juice
- 1/2 cup water
- 1/4 cup medium pearl barley
- 1 to 1-1/2 teaspoons chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1. In a large saucepan over medium heat, cook beef, onion and celery until meat is no longer pink; drain. Stir in the tomato juice, water, barley, chili powder, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 50-60 minutes or until barley is tender. Yield: 2 servings.
1 cup: 332 calories, 11g fat (5g saturated fat), 56mg cholesterol, 1681mg sodium, 35g carbohydrate (12g sugars, 6g fiber), 25g protein.
