Barbecue Pork and Penne Skillet Recipe
- 1 package (16 ounces) penne pasta
- 1 cup chopped sweet red pepper
- 3/4 cup chopped onion
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 carton (16 ounces) refrigerated fully cooked barbecued shredded pork
- 1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
- 1/2 cup beef broth
- 1 teaspoon ground cumin
- 1 teaspoon pepper
- 1/4 teaspoon salt
- 1-1/4 cups shredded cheddar cheese
- 1/4 cup chopped green onions
- 1. Cook pasta according to package directions. Meanwhile, in a large skillet, saute red pepper and onion in butter and oil until tender. Add garlic; saute 1 minute longer. Stir in the pork, tomatoes, broth, cumin, pepper and salt; heat through.
Drain pasta. Add pasta and cheese to pork mixture; stir until blended. Sprinkle with green onions.
Freeze option: Freeze cooled pasta mixture in freezer containers. To use, partially thaw in refrigerator overnight. Place in a shallow microwave-safe dish. Cover and microwave on high until heated through. Yield: 8 servings.

Also I used the Original Tomatoes w Green Chilis and it is more spicy than the mild version. Using what I spent (some ingredients were on sale), I found this meal to be around $1.50 per person which is a real bargain."

"Good texture, easy and quick to put together, not too spicy for the kids (6 & 10), 10 yr old asked if she could have leftovers for her lunch tomorrow. However, my dh and I did not care for it. I think pork w/o the BBQ might be better for us. To be fair, we don't make many one pan meals. We prefer meat, grain & vegetable separate. If you like BBQ pork it's definitely worth trying. It does make a huge pan full."

"I've been wanting to try this for awhile. I used my own leftover barbecued pork roast, which I cooked in the slow cooker yesterday. I did not use butter and did not have any peppers our would have used some. Used the whole can of beef broth (low sodium), added gradually for the pasta to absorb. I like the flavor of the cumin in the dish I also used medium whole wheat shells. I love this type of food...and especially new pasta dishes, but unfortunately such dishes are not my family's cup of tea. However, I enjoyed this for supper and will take it for my lunches this week. It does make a lot."

"This recipe was DEELISH! Loved it. I did do some short cuts. I purchased a tub of premade pulled pork at my local grocery store for $4. Also, instead of red bell peppers, I used green. Since the prepackaged pulled pork had a enough sauce, I poured the entire can (juice and all) into the skillet and it thinned it out. " Take a cheap cut of pork (I use a pork butt), remove the bone and some of the fat but not all, use a dry rub of spices of your choice ( I use garlic powder, dry mustard, brown sugar, smokey paprika, a little salt, and black pepper) place it in a crock pot, and cook on low for about 5-6 hours until fork tender. Remove from the crock pot and with two table forks, begin shredding the pork. Place all of the shredded pork in a stove top pan and add your favorite bar-b-que sauce and heat through.
