Ingredients

  • 1 egg
  • 2 tablespoons milk
  • 4 cups barbecue potato chips, crushed
  • 1/2 pound boneless skinless chicken breasts, cut into 1-1/2-inch cubes
  • Barbecue sauce

383 calories: 2 ounce-weight, 22g fat (7g saturated fat), 85mg cholesterol, 380mg sodium, 30g carbohydrate (1g sugars, 3g fiber), 17g protein .

Directions

  1. In a shallow bowl, whisk egg and milk. Place potato chips in another shallow bowl. Dip chicken in egg mixture, then roll in chips. Place in a single layer on a greased baking sheet. Bake at 400° for 10-15 minutes or until meat is no longer pink. Serve with barbecue sauce. Yield: 4 servings.

"So quick and easy and delicious. Definitely something I could whip together on busy weekdays. Next time I may try with some hot sauce in the egg like someone else suggested, but they are definitely perfect as they are... Moist and crunchy. Tasted like I grilled them on the grill but didn't! I love them! Thank you."
