Ingredients

  • 2 pounds parsnips, halved and cut into 1-inch pieces
  • 2 medium onions, halved and sliced
  • 1/4 cup packed brown sugar
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  • Preheat oven to 425°. In a large bowl, combine all ingredients.
  • Transfer to a greased 15x10x1-in. baking pan.
  • Cover and bake 35 minutes. Uncover; bake 5-10 minutes or until
  • tender. Yield: 4 servings.
