- 3 cups quick-cooking oats
- 1 cup packed brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 eggs
- 1 cup milk
- 1/2 cup butter, melted
- Additional milk
- Preheat oven to 350°. In a large bowl, combine oats, brown sugar, baking powder, salt and cinnamon. In another bowl, whisk eggs, milk and butter. Stir into oat mixture until blended.
- Spoon into a greased 9-in. square baking pan. Bake 40-45 minutes or until set. Serve warm with milk. Yield: 9 servings.

"Made this for breakfast this morning, this was very good and it was nice to have a change from regular oatmeal (I don't buy the expensive boxes of oatmeal). I did sub 1/4 cup applesauce for half of the butter and cut down slightly on the brown sugar, 3/4 cup instead of a full cup. Served it with a little milk poured over it, it mostly got soaked up by the oatmeal. Thanks for all the suggestions of all of you who tried it before. I think I will try it with some chopped apples next time!"
"I have been making this for years. However, I just got back from Amish country and while I was there I had a baked oatmeal that had diced strawberries and chocolate chips. So I made this with about 3/4 cup strawberries and a quarter cup mini semi sweet chips. I did add about 1/2 cup extra milk. I also only used 3/4 cups brown sugar and 2-3 tablespoons of butter so it is a little more healthy. I crank the heat up to 400 so it will bake much quicker (a mom of 4!), and it was perfect. 20-25 minutes instead. We love the milk in it as well. We ate so much we skipped lunch!"
"Love this! If I close my eyes and ignore the brown sugar, it's even healthy! Tips: You don't need to add the extra milk that others mention. If you substitute applesauce in place of the butter, it makes it nice and moist (and healthier!). It could use a bit extra flavor though. Next time I'll add some vanilla and maybe a bit more cinnamon."
