This mushroom chicken bake recipe is the perfect way to dress up a standard weeknight dinner. It's a recipe I can count on to yield tender and flavorful results every time. —Barbara McCalley, Allison Park, Pennsylvania

Ingredients

  • 4 boneless skinless chicken breast halves (1 pound)
  • 1/4 cup all-purpose flour
  • 3 tablespoons butter, divided
  • 1 cup sliced fresh mushrooms
  • 1/2 cup chicken broth
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/3 cup shredded part-skim mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup sliced green onions

Directions

  1. Flatten each chicken breast half to 1/4-in. thickness. Place flour in a shallow bowl. Dip chicken in flour to coat both sides; shake off excess.
  2. In a large skillet, brown chicken in 2 tablespoons butter on both sides. Transfer to a greased 11x7-in. baking dish. In the same skillet, saute mushrooms in the remaining butter until tender. Add the broth, salt and pepper. Bring to a boil; cook until liquid is reduced to 1/2 cup, about 5 minutes. Spoon over chicken.
  3. Bake, uncovered, at 375° until chicken is no longer pink, about 15 minutes. Sprinkle with cheeses and green onions. Bake until cheese is melted, about 5 minutes longer.

How do you keep chicken moist in the oven?

Be careful not to overcook your chicken. Because chicken breast meat is naturally low in fat, it tends to dry out when overcooked. What goes well with mushroom chicken?

What doesn’t go well with this popular and versatile dish? For a starch, consider mashed potatoes, gnocchi, hot buttered noodles or pasta tossed with a little olive oil and Parmesan cheese. Craving veggies? Double up or even triple the mushrooms and season them with a little wine or sherry. Or simply steam a bag of frozen broccoli. Feeling fancy? Then serve one of these Italian side dishes.

Can I make this mushroom chicken with cream of mushroom soup?

You could. This recipe makes a homemade sauce with butter, flour and chicken broth, but you could substitute in a can of mushroom soup and a half-can of water.
