Bacon 'n' Egg Sandwiches Recipe

I came across this unique grilled combo when I was digging in my mom's recipe box. The crisp bacon, hard-cooked eggs and crunchy green onions make these special sandwiches look impressive when company drops by for lunch. Best of all, they're a snap to assemble. -Ann Fuemmeler, Glasgow, Missouri
TOTAL TIME: Prep/Total Time: 20 min. YIELD:4 servings


  • 1/2 cup sour cream
  • 8 slices bread
  • 4 green onions, chopped
  • 4 slices process American cheese
  • 2 hard-cooked large eggs, cut into 1/4-inch slices
  • 8 cooked bacon strips
  • 2 tablespoons butter, softened


  • 1. Spread sour cream over four bread slices; top with green onions, cheese, eggs, bacon and remaining bread. Spread outsides of sandwiches with butter.
  • 2. Toast sandwiches until golden brown and cheese is melted, 2-3 minutes per side. Yield: 4 servings.

"I though this was very good. A new twist to the good old fashion grilled cheese. Even though it called for green onion, I would go alittle easy on topping it on the sandwich. Kind of took over on the delicate flavorings."
