Bacon & Tomato Spaghetti Recipe
- 8 ounces uncooked spaghetti
- 1/2 pound thick-sliced bacon strips, chopped
- 2 cups cherry tomatoes, halved
- 3 cups fresh baby spinach
- 1/4 cup balsamic vinaigrette
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Grated Parmesan cheese
- 1. Cook spaghetti according to package directions.
- 2. Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 2 tablespoons drippings. Saute tomatoes in drippings until tender. Drain spaghetti; stir into skillet. Add the spinach, bacon, vinaigrette, salt and pepper; heat through. Sprinkle with cheese. Yield: 4 servings.
1-1/4 cup: 409 calories, 18g fat (5g saturated fat), 21mg cholesterol, 833mg sodium, 49g carbohydrate (5g sugars, 3g fiber), 15g protein.

"Great idea. I added some sauteed sweet onions. And used angel hair pasta. I didn't have fresh spinach so I added asparagus instead, it was amazing. I also only had a balsamic glaze, so I used my pork chop sauce recipe which is balsamic glaze, honey, thyme and garlic. It's one of my new favorite recipes!"

"We enjoyed this recipe very much! I couldn't bring myself to "cook" the fresh, farmer's market cherry tomatoes, so I kept them raw and tossed them with the spinach and hot pasta. They wilted just enough to soften...perfect. I also added a bunch of scallions that I sliced into ribbons with my green bean "frencher" tool. The pasta I used was a tubular rice pasta which made the dish GF. I did use the bacon drippings, but I omitted the extra oil of the vinaigrette; instead, I used white balsamic vinegar as I usually do when making German potato salad. I am so glad there are leftovers...will bring to room temperature before eating!!!"

"I have made this a couple of times and love it! I did make a couple of changes. I used A Taste of Thai vermicelli noodles (gluten free) instead of regular. I also made a vinagraitte using white balsamic vinegar, olive oil and a dried Italian herb mixture. I have made this with cherry tomatoes and regular tomatoes I cut up. "So nice to see so many (25) positive reviews. Will make as soon as I can get my hands on some cherry tomatoes. To answer Toni51's question about type of pasta (I did use the internal system as well - by clicking on the name) - virually all shapes of pasta are made with the same ingredients - so use whatever shape you have or prefer. Shells and penne can trap more sauce. Choose a size that doesn't overwhelm the other ingredients. You could also use egg noodles as well. For some dishes I use the coloured/flavoured noodles, but I think this dish is colourful enough and is best with the plain pasta. Hope this helps."

"Great recipe. Very easy to make and it was delicious! Both my hubby and 13-yr-old son said for sure this is a keeper and to make again! I did add a few green onions to it as a personal preference and all I did for the balsamic dressing was used 2 parts EVOO to 1 part balsamic along with some minced garlic. This is a very forgiving recipe when it comes to adding more or less of an ingredient per personal taste. THANKS for sharing it!!"
