Ingredients

  • 1 pound peeled and deveined cooked shrimp, chopped
  • 2 medium tomatoes, seeded and chopped
  • 2 medium ripe avocados, peeled and chopped
  • 1 cup minced fresh cilantro
  • 1 medium sweet red pepper, chopped
  • 3/4 cup thinly sliced green onions
  • 1/2 cup chopped seeded peeled cucumber
  • 3 tablespoons lime juice
  • 1 jalapeno pepper, seeded and chopped
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Tortilla chips

Nutritional Facts

1/4 cup (calculated without chips): 52 calories, 3g fat (0 saturated fat), 33mg cholesterol, 133mg sodium, 3g carbohydrate (1g sugars, 1g fiber), 5g protein. Diabetic Exchanges: 1 lean meat, 1/2 fat.

Directions

  1. In a large bowl, combine the first 11 ingredients. Serve with tortilla chips. Yield: 6 cups.
Editor's Note: Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.
