Avocado Dressing Recipe
- 1 cup buttermilk
- 1/2 cup fat-free plain yogurt
- 1 ripe avocado, peeled and sliced
- 2 green onions, chopped
- 1/4 cup minced fresh parsley
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dill weed
- 1/8 teaspoon pepper
- 1. In a blender, combine all ingredients; cover and process until blended. Transfer to a jar with a tight-fitting lid or small bowl. Serve immediately or refrigerate. Yield: 2 cups.
2 tablespoons: 30 calories, 2g fat (0 saturated fat), 1mg cholesterol, 96mg sodium, 2g carbohydrate (1g sugars, 1g fiber), 1g protein. Diabetic Exchanges: 1/2 fat.
