Asian Style Gazpacho Soup

 Asian Style Gazpacho Soup
A great combination of ingredients makes this a light tasting soup made with tomatoes and fresh ginger. Brought to you by dLife®

  • 6 medium tomatoes, seeded and finely chopped
  • 2 cups low sodium chicken broth
  • 1 teaspoon cooking sherry
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon low sodium soy sauce
  • 4 scallions, white part only
  • 4 thin slices fresh gingerroot
  • 1/4 teaspoons chili sauce
  • 2 medium limes


  • In medium saucepan over low heat, add tomatoes, broth, sherry,
  • cilantro, soy sauce, scallions, and ginger.
  • Simmer 20 minutes. Remove from heat and allow to cool.
  • Transfer soup to food processor or blender and puree until smooth.
  • Chill.
  • Before serving, stir in chili sauce.
  • Grate zest from one lime. Set aside.
  • Squeeze juice from both limes into soup. Stir well.
  • Ladle soup to chilled bowls and garnish with lime zest.
