"Apples and oats make up one of my favorite flavor combinations—and they are delicious in this snack cake," notes Julie Dometrovich from Aliquippa, Pennsylvania.

Ingredients

  • 1 cup boiling water
  • 1/2 cup old-fashioned oats
  • 1-3/4 cups King Arthur Unbleached All-Purpose Flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 1/3 cup unsweetened applesauce
  • 1 egg
  • 1-1/2 teaspoons vanilla extract
  • 1 medium apple, peeled and chopped
  • TOPPING:
  • 1/2 cup old-fashioned oats
  • 1/4 cup King Arthur Unbleached All-Purpose Flour
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons cold butter

  • In a bowl, combine boiling water and oats; set aside. In a large
  • bowl, combine the flour, baking soda, cinnamon and salt. In a bowl,
  • combine the sugars and applesauce; beat well. Add the egg, vanilla

  • and oat mixture; mix well. Stir into dry ingredients just until
  • combined. Fold in apple.
  • Pour into an 8-in. square baking dish coated with cooking spray. For
  • the topping, combine the oats, flour, brown sugar and cinnamon. Cut
  • in butter until mixture resembles coarse crumbs; sprinkle over
  • batter. Bake at 350° for 40-45 minutes or until a toothpick
  • inserted near the center comes out clean. Cool on a wire rack.
  • Yield: 12 servings.
