Apple Juice Vinaigrette

- 2 teaspoons unsweetened apple juice
- 1 teaspoon water
- 1 teaspoon rice vinegar
- 1 teaspoon lemon juice
- 1 teaspoon olive oil
- 1/4 teaspoon sugar
- 1/4 teaspoon Dijon mustard
- 1/8 teaspoon salt
- Spring mix salad greens
- Assorted fresh fruit
- In a small bowl, whisk the first eight ingredients. Drizzle over
- greens and fruit. Yield: 2 tablespoons.
