  • 3 medium tart apples, peeled and sliced
  • 2 medium sweet potatoes, peeled and thinly sliced
  • 3 cups cubed fully cooked ham
  • 3 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon curry powder
  • 2 tablespoons cornstarch
  • 1/3 cup apple juice
  • 1 cup pancake mix
  • 1 cup milk
  • 2 tablespoons butter, melted
  • 1/2 teaspoon ground mustard

1 serving (1 cup) equals 264 calories, 9 g fat (4 g saturated fat), 40 mg cholesterol, 1051 mg sodium, 34 g carbohydrate, 2 g fiber, 13 g protein.


  1. In a large skillet, combine the apples, sweet potatoes, ham, brown sugar, salt, pepper and curry. Cook over medium heat until apples are crisp-tender; drain. Combine cornstarch and apple juice until smooth; stir into apple mixture. Bring to a boil; cook and stir for 1-2 minutes or until mixture is thickened.
  2. Transfer to a greased 2-qt. baking dish. Cover and bake at 375° for 10 minutes or until sweet potatoes are tender. Meanwhile, in a large bowl, whisk together the pancake mix, milk, butter and mustard; pour over ham mixture.
  3. Bake, uncovered, for 25-30 minutes or until puffed and golden brown. Yield: 8 servings.

"Had to log in and leave my first review on this one, this was one of the best casserole recipes I've made in awhile! Really not sure what the other commenter was talking about. We have a 2.5 yr old son, who loved this casserole. But with the curry (which you can taste, it gives the whole dish that extra flavor) and the mustard in the puffy topping to outway the sweetness, this dish has enough intricate flavors to appeal to adults too. My husband loved it as well. I did read the reviews and was afraid that the sweet potatoes would not get done, so I microwaved those first for a bit to soften them up, then I peeled and cut them. They got all soft in the pan, so I cut out the first part where you have to bake it to soften the sweet potatoes. It sped the whole process up a bit. (Not that I advise microwaving anything! I would peel them and boil them seperately, maybe?) I could see if the sweet potatoes were not done, how it would not be as good. I am adding this recipe to my recipe book and we will be making it often!"

"To the commenter that said her daughter gagged....really??? Come on. I'm eating this dish as I type this, it's amazing. It was a great way for me to use up leftover ham and some apples I had going bad. Flavor is great. The sweet potatoes weren't tender yet when I put it in the oven, but I cooked 40 minutes and they were fine. Just make sure you cut them thin enough to begin with. Will definatly make this again and again, whole family loved it."
