Ingredients

  • 5-1/2 cups chopped green tomatoes
  • 5-1/2 cups sugar
  • 1 package (6 ounces) raspberry gelatin

Nutritional Facts

1 serving (2 each) equals 91 calories, trace fat (trace saturated fat), 0 cholesterol, 9 mg sodium, 23 g carbohydrate, trace fiber, trace protein.

Directions

  1. In a large stockpot, combine tomatoes and sugar. Bring to a boil. Reduce heat; simmer 25 minutes, stirring occasionally. Remove from heat; stir in gelatin until dissolved, about 1 minute. Pour into jars or plastic containers; cool, stirring occasionally to prevent floating fruit. Top with lids. Refrigerate up to 3 weeks. Yield: 7 cups.

"This is one strange recipe. I can't say it actually tastes like raspberries, but it is really really good. Considering that I was stuck w/ nearly 4 gallons of green tomatoes, this recipe is a true lifesaver. Thanks again! Btw, for those who commented on a similiar recipe about it being too sweet, add 3 tablespoons of lemon juice to rebalance the flavor.

UPDATE: Tried a few batches with black cherry jello. Works quite well, a dark and sweet ruby red."

"I did try the strawberry jello, it is not as good as the raspberry. So I am not going to make any more batches using the strawberry. I really love the raspberry. Will definitely stick to making it the original way."

"This is a great way to use up green tomatoes. I love the taste. You don't even know you are eating green tomatoes. I am thinking about using strawberry gelatin instead of raspberry. I really like the raspberry but my youngest loves strawberry so I think I'm going to try it. LOVE THIS RECIPE!!!!! and it is SO EASY!!! :) :)"
