- 5-1/2 cups chopped green tomatoes
- 5-1/2 cups sugar
- 1 package (6 ounces) raspberry gelatin
- In a large stockpot, combine tomatoes and sugar. Bring to a boil. Reduce heat; simmer 25 minutes, stirring occasionally. Remove from heat; stir in gelatin until dissolved, about 1 minute. Pour into jars or plastic containers; cool, stirring occasionally to prevent floating fruit. Top with lids. Refrigerate up to 3 weeks. Yield: 7 cups.

"This is one strange recipe. I can't say it actually tastes like raspberries, but it is really really good. Considering that I was stuck w/ nearly 4 gallons of green tomatoes, this recipe is a true lifesaver. Thanks again! Btw, for those who commented on a similiar recipe about it being too sweet, add 3 tablespoons of lemon juice to rebalance the flavor.UPDATE: Tried a few batches with black cherry jello. Works quite well, a dark and sweet ruby red."
