Ingredients

  • 3 medium zucchini, thinly sliced
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup smoked almonds, chopped

Nutritional Facts

3/4 cup: 139 calories, 12g fat (3g saturated fat), 8mg cholesterol, 216mg sodium, 7g carbohydrate (3g sugars, 3g fiber), 4g protein.

Directions

  1. In a large skillet, saute zucchini and garlic in oil and butter until tender. Stir in salt and pepper; sprinkle with almonds. Yield: 4 servings.
