Almond Bars Recipe
- 4 Eggland's Best Eggs
- 2 cups sugar
- 1 cup butter, melted
- 2 cups all-purpose flour
- 2-1/2 teaspoons almond extract
- Confectioners' sugar
- In a large bowl, beat the eggs and sugar until lemon-colored. Beat in butter and extract; gradually stir in the four and mix well. Spread into a greased 13-in. x 9-in. baking pan.
- Bake at 325° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Sprinkle with confectioners' sugar. Yield: 2 dozen.

I increase the recipe by another 4th and bake in a 10x15 pan. Then I cut the puffier edges off and slice the middle part into bars. The "scraps" are my at home treat! EVERYBODY loves these - crispy top, gooey inside, simple and delicious.
I've made these many times. Very good!

It was ok...
Followed the recipe exactly, but they came out very dry and cakey with a crusty top which crumbled when I cut through it. The taste was fine, just need WAY to be way more moist for my taste. I will not be using this recipe again.
